Air Fryer Tomato Courgette Pasta

Who said carbs are bad? This is a slightly healthier pasta recipe you should try for dinner.

Ingredients

  • 200g penne pasta (or your fave shape)

  • 150g cherry tomatoes, halved

  • 1 medium courgette, sliced into rounds

  • 30ml olive oil

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • 30g grated Parmesan cheese

  • 15g fresh basil leaves, chopped

Instructions

  1. Heat the air fryer to 180°C (356°F). Meanwhile, cook the penne pasta in a pot of boiling salted water according to package instructions until al dente. Drain and set aside.

  2. In a bowl, toss the sliced courgettes with 1 tablespoon of olive oil, salt, and pepper. Arrange them in the air fryer basket and cook for 8 minutes until tender and lightly browned.

  3. Remove the courgettes from the air fryer and set aside. In the same air fryer basket, place the halved cherry tomatoes, drizzle with remaining olive oil, and cook for 5 minutes until soft.

  4. In a large mixing bowl, combine the cooked pasta, air-fried courgettes, cherry tomatoes, minced garlic, and grated Parmesan cheese. Toss well to combine.

  5. Transfer the pasta mixture back to the air fryer basket. Cook for another 3 minutes to heat through and allow the cheese to melt.

  6. Garnish with freshly chopped basil leaves and an extra sprinkle of Parmesan cheese before serving.

Notes

  • You can add a pinch of red pepper flakes if you prefer a bit of heat in your pasta.

  • Add grilled chicken or shrimp to make the dish more protein-rich.
