Delicious and healthy, the ideal dinner for a busy student.
Ingredients
4 large bell peppers
200g cooked quinoa
150g cooked black beans
125g corn kernels
1 medium onion, chopped
100g shredded cheddar cheese
5g cumin
Salt and pepper to taste
15ml olive oil
Instructions
Preheat your air fryer to 180°C (350°F).
Cut the tops off the bell peppers and remove the seeds and membranes.
In a mixing bowl, combine cooked quinoa, black beans, corn, chopped onion, cumin, salt, and pepper. Stir well.
Stuff each pepper with the quinoa mixture and top with shredded cheddar cheese.
Brush the peppers lightly with olive oil.
Place the stuffed peppers in the air fryer basket.
Air fry for 12 minutes or until the peppers are tender and the cheese is melted and bubbly.
Carefully remove the peppers and allow them to cool slightly before serving.
Notes
For a meatier version, add browned ground beef or turkey to the filling. Experiment with different cheese types, such as feta or mozzarella, for varied flavour.
Try using different coloured bell peppers for more visual appeal and a hint of sweetness. Add chopped jalapeños to the filling for a spicy kick.
