Ingredients
500g sweet potatoes, peeled and diced
1 red bell pepper, diced
1 green bell pepper, diced
1 medium onion, diced
30ml olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
Salt and black pepper to taste
2 green onions, sliced for garnish
4 fried eggs (optional, for serving)
Instructions
Preheat the air fryer to 390Β°F (200Β°C). You can skip this step if you're short on time β preheating isn't so necessary with air fryers.
In a large bowl, combine the diced sweet potatoes, red bell pepper, green bell pepper, and onion. Drizzle with olive oil and toss to coat. You can always add some protein here too, like diced halloumi, chorizo, even bacon!
Sprinkle the smoked paprika, garlic powder, ground cumin, salt, and black pepper over the vegetables. Mix well to evenly distribute the spices.
Transfer the seasoned vegetables to the air fryer basket.
Cook in the air fryer for 20 minutes, stirring halfway through, until the sweet potatoes are tender and slightly crispy.
Once cooked, remove from the air fryer and sprinkle with sliced green onions.
Serve hot with a fried egg on top, if desired.
Notes
For added flavour, try adding cooked crumbled bacon or sausage before serving.
You can substitute sweet potatoes with regular potatoes or even butternut squash for a different taste.
