A very tasty and easy lunch; easy to pack for packed lunches, too.
Ingredients
2 medium baguettes (or 4 smaller ones)
240 ml marinara sauce
200 g shredded mozzarella cheese
50 g sliced pepperoni
35 g sliced olives
35 g sliced bell peppers
15 ml olive oil
5 ml Italian seasoning
Instructions
Preheat your air fryer to 370°F (188°C).
Slice the baguettes in half lengthwise, creating four open-faced pieces.
Brush each half lightly with olive oil to ensure crispiness.
Spread a generous layer of marinara sauce over the cut side of each baguette half.
Top with shredded mozzarella cheese, ensuring an even distribution.
Add slices of pepperoni, olives, and bell peppers over the cheese layer.
Sprinkle Italian seasoning for added flavour.
Place the prepared baguettes into the air fryer basket, ensuring they are evenly spaced.
Air fry for 8-10 minutes or until the cheese is bubbly and the edges are golden brown.
Carefully remove the baguettes from the air fryer and allow them to cool for a minute or two.
Notes
For a vegetarian option, remove the pepperoni and add additional vegetables like tomatoes, mushrooms, and spinach.
Try using a pesto base instead of marinara sauce for a different flavour.
